I was keen on trying out my new Zojirushi machine to make some dough and bake the bread in the oven. For that I decided to go for an olive oil and herbs infused bread.

For the dough I used a simple basic bread recipe:
- 1 1/3 cups of warm water
- 4 1/4 cups of all purpose flour
- 2 tbsp of sugar
- 2 tsp of salt
- 3 tbsp of olive oil
- 2 1/2 tsp of instant yeast
Add it all of that to my Zojirushi Home Bakery Virtuoso BB‑PAC20 and set it for dough function. The full cycle takes more than 2 hours for resting, kneading, and proofing.

For the herbs and olive oil you will need:
- 1 tbsp of basil
- 1 tbsp of rosemary
- 1 tbsp of oregano
- 3 tbsp of olive oil
Once the dough was ready, punch it down a couple of times with your fist, knocking out all the air bubbles. Tip out onto a floured work surface and dust the top with a little flour too, if it is sticky. Roll the dough out to a rectangle. Cover dough in a mix of herbs and olive oil. Fold the corners of the bread to make an envelope.

Loosely cover with oiled cling film and leave to prove for 30 mins–1 hr until almost doubled in size again.
Bake for 35 min – 40 min (depending on how dark crusted you want it) in 375F.
