Last week I made some homemade croutons – a great way to use up a stale bread. I used them for making sweet corn soup with chili flakes.

You can prepare croutons in a very simple way:
- Pre-heat oven to 350 degrees F (175 degrees C).
- Brush stale bread on both sides with olive oil. Cut bread slices up into small cubes. Arrange cubes on an ungreased cookie sheet.
- Bake at 350 degrees F (175 degrees C) for 15 minutes or until browned. Let cool. Store croutons in a covered container or plastic bag.
As it goes for the soup I used the following ingredients:
- 3 potatoes
- 1 bag of frozen sweet corn
- 1 cube of stock
- Some chili flakes
Preparation: peel tomatoes and cut them in slices; add potatoes frozen corn, stock cube to pot and pour boiling water (the water should be half time more than the ingredients); boil for 20 min; use blender to smooth the soup.
Result- very tasty, simple and quick soup!

This sounds like an awesome way to use the sweet corn that we canned this past summer!
