Basic bread recipe can be very versatile. Just a couple of additions can make the bread sweet or savory.

This time I took a simple white bread recipe added sugar, cinnamon and cranberries and made a sweet and simple bread.
I got some inspiration from:
http://thepioneerwoman.com/cooking/homemade-cinnamon-bread/ – a beautiful loaf of bread; to make a cinnamon swirl she rolled out the bread, sprinkled cinnamon and sugar on top and rolled it back.
http://www.marthastewart.com/314213/cranberry-bread – in this recipe again she used eggs and soaked the cranberries.
My recipe:
- 1 cup of soaked cranberries
- 1 ½ tsp of instant yeast
- ½ cup of mix of sugar and cinnamon
- 1 tsp of salt
- 3 1/2 cups of bread flour
- 1 cup of warm water
My recipe is really simple: just mix all the ingredients together in bread machine, put bread in form (sprinkle with olive oil), let is raise for 1 hours in room temperature and bake in 375F for 40min.

The way the cranberries and cinnamon swirl in the middle almost makes it look as if the dough was flattened and rolled up (like a jelly roll. Looks good anyway.

Thank you for the comment! Maybe I should have used less sugar, it made the dough “sank” a bit in the middle. I will try that next time.

I suppose it should work to roll it like you would cinnamon rolls. Now that I think of it, it would probably make really good “cranberry rolls.”

I hope it works. I’ve only tried it with cinnamon, nuts, and raisins, but there’s no reason it shouldn’t work with other things.
