Lately I have been making quite a lot of juice and carrots is one of the main ingredients that I use. It is truly a shame to waste all the remaining pulp of carrots. So, I baked bread with it!

In most of the cases carrot breads are sweet. For example:
Carrot apple bread:

These breads look great! Never the less, I was looking for a recipe that would help to bake a bread that could be eaten with everything.

In this way I have adjusted the recipes and came up with this one:
- 1 cup of carrots (grated)
- 1 pack of active yeast
- 1 tbsp of brown sugar
- 1 tsp of salt
- 2 tbsp of olive oil
- 3 1/2 cups of bread flour
Mix all the ingredients in bread machineย โ dough setting. Then form the bread and leave it rise in 100F.
Bake in 390F for 35min.

that’s a great idea! is it a moisty kind of bread or a more regular one?

Oh yum, I love anything to do with carrots and baking (though oddly I am not that keen on carrots as a veg). I will make this next time I need to make bread – but not this week, as hubby went mad in the new bakery in town and I have enough bread in the freezer to feed most of Turkey.
