Macaroni and cheese is considered to be one of the most traditional comfort foods in U.S. Still, the history of this dish is quite interesting and goes long back.

Pasta and cheese casseroles have been recorded as early as the 14th century in the Italian cookbook Liber de Coquina, one of the oldest medieval cookbooks, which featured a dish of parmesan and pasta. A cheese and pasta casserole known as makerouns was recorded in the famous medieval English cookbook, the Forme of Cury, which was also written in the 14th century. It was made with fresh, hand-cut pasta which was sandwiched between a mixture of melted butter and cheese.
The first modern recipe for the dish was included in cookery writer Elizabeth Raffald’s 1769 book, The Experienced English Housekeeper. However it is believed Raffald’s recipe came from friend Emma Baguley, the inventor of the tasty combination. Raffald’s recipe is for a Béchamel sauce with cheddar cheese—a Mornay sauce in French cooking—which is mixed with macaroni, sprinkled with Parmesan, and baked until bubbly and golden. The famous British Victorian cookbook Mrs Beeton’s Book of Household Management included two recipes for the dish.

So, putting all this together below you will find my take on mac and cheese made in bread machine. My recipe is more of the Italian non baked version of macaroni and cheese.
Ingredients:
- 4 oz of pasta (1/4 of 16oz box, can be any pasta, but I used penne)
- 1/2 cup of whole or 2% milk
- 1 tbsp of unsalted butter
- 1 tbsp of all-purpose flour
- 1 cup of Parmesan cheese
- Some pepper and chili
First cook all ingredients. Pasta: bring water to boil and add some salt, then add pasta into boiling water and cook it for 12min. Parmesan: grate cheese. Butter: melt it in the microwave (about 15sec).
Preparation: put milk, flour, melted butter, cheese and spices to bread machine. Select baking cycle and leave the sauce cooking for 10 min. Stir it up and add cooked pasta. Leave all the ingredients in bread machine for another 10min. Serve and eat!
