Quiche with dough made in bread machine

As we all know quiche is a savory, open-faced pastry crust with a filling of savory custard with cheese, meat, seafood, and/or vegetables. Quiche can be served hot or cold and it is part of French cuisine that became famous all over the world.

Quiche was my next bread machine project. Or to be more precise – dough made in bread machine and filling made from the things that I found in my fridge.

First of all, I checked a couple of recipes and then came with my own interpretation of quiche.




Preparation of my recipe is very simple. First make the dough in bread machine:

  • 2 cups of bread flour
  • 1 tsp of salt
  • 1 tbsp of active yeast
  • 1 tbsp of sugar
  • 2 tbsp of olive oil

Let the dough rise and prepare filling in the meantime. It is as simple as that: warm up frozen vegetables together with pre-cooked turkey breast. I used the leftovers from yesterday’s dinner. Once again you can put pretty much anything in quiche. I found it as a good dish to cook when you need to use up some leftovers.

And then put vegetables and turkey inside the prepared dough. I had a bit of leftover of the dough, so I made crumbles out of it and put it on top of the quiche. Bake it for 45 min in 350F. 5 min until the end of baking add Parmesan.

    Do you do a custard for it? Quiche is usually a savory custard pie.

    1. Yes, it is normally a custard pie. Still, I made my interpretation of it and did it without it.

    I should have read carefully before trying this.

    Those ingredients will NOT make a pastry dough in a bread machine. No liquid or eggs, and no yeast needed for a pastry.

    With regard to a quiche – a quiche with no eggs? How novel! Were you trying to make pizza?

    This was a complete waste of ingredients.

      Likewise.. The recipe for the dough in the bread maker doesn’t work.. It is missing some liquid to form a dough.. my bread maker is just swirling the dry flour around.
