My inspiration for bread recipes often comes just by looking into what we have in the kitchen. In this way, I have noticed that we had quite a lot of vanilla Greek yogurt and it was about to expire. So, my next quick bread recipe was all about substituting water by Greek yogurt.

You will need:
- 1 cup of vanilla Greek yogurt (you should warm it up before putting into bread machine)
- 1 1/2 tbsp of active yeast
- 1 tbsp of brown sugar
- 1 tsp of salt
- 3 1/2 cups of bread flour
Set bream machine for white bread cycle and you will get a very soft and fluffy bread.

Even though I used vanilla flavored Greek yogurt, the bread did not came out too sweet. Still, it was very soft and stayed fresh for 4 days.

Yes, you can bake it in the oven. Just let the dough rise for 1hour before – warm up oven to 100F and leave dough there. And then bake it for 40min in 350F. Enjoy!

Don’t know how this would last four days and stay fresh. Hubby and I have eaten most of the loaf tonight and there is a slice or two for toast in the morning! Very moist. In not using a bread machine I only used 3 cups of flour and added an extra big dollop of yogurt. I used plain Greek, and the tang was nice and mellow. A very rich crumb on this bread. I’ll make it again!

You are quite adventurous with the bread making! Using vanilla yoghurt (it would never get past the BB date in my fridge!!!)
