Bread maker is a wonderful device! For my next unexpected use of this machine I decided to try out risotto. To be more precise shrimp risotto.
Unfortunately, my first obstacle was to find Arborio rice which is normally used for making risotto. So, instead I used some jasmine rice. Never the less, the result came out quite nice.
The ingredients:
- 1/2 cup of white wine
- 1 stock cube
- 1 cup of rice (preferably Arborio)
- 1/2 cup of graded parmesan cheese
- Shrimps
The preparation is extremely simple. Dissolve stock cub in 2 cups of hot water.
Put a cup of rice, dissolved stock cup and wine in bread machine. Set it to jam function (mine goes for 1H 05min). And leave it for 50min.
Grade some parmesan in a meantime.
After 50 min add shrimps (add a bit of water if it looks too dry).
5 min to the end of the cooking add parmesan cheese (leave some to sprinkle on top when it is done).
Thank you for stopping by my blog. The anadama bread (http://mykitchenmythoughts.com/2016/03/04/anna-damn-her-bread/) can also be made in a bread machine. Put all ingredients in and set on dough cycle per the cookbook. You might know what that means better than I; I’ve not used a bread machine.

Looks delicious! I’m allergic to shrimp though. What are your thoughts about other types of protein in there?

Thanks! I think you can easily do veggie version (just cut fresh ones or put frozen veggies together with rice, as it would take more time to cook), if you up for trying meat one you can use leftover lamb, turkey or chicken (it has to be cooked upfront as bread machine will not be able to cook it), or fish. Enjoy!
