I am trying to be creative with all the jams that I have made recently. So, I have decided to bake a cake with mango jam that I made a couple of weeks ago (see the link below).
http://sourdoughmovement.com/2016/02/10/something-different-mango-jam/
For ingredients I used:
- 1 jar of mango jam (can be any kind of jam for that matter)
- 3 cups of all purpose flour
- 1/2 cup of sugar
- 4 tbsp of greek yogurt
- 2 tsp of baking powder
So, just put all ingredients together. Depending on your jam check the consistency of dough – if it is too liquid add more flour; if it is too dense – more yogurt.
And bake it in 350F for 50min.
The cake comes out very fresh!
Jam bread – I like it! I’ll have to try it.

looks great! how strong was the mango flavour?

Thanks! The flavor was not too strong, only the piece of mango gave more taste. Jam itself gives a very soft texture and makes cake sweet (so you can use less sugar or no sugar at all)
