My further exploration of bread machine was to prepare empanadas. I have made some adjustments and well overall I would say made a Lithuanian interpretation of this well known dish.
The recipe was as following:
First of all, I have prepared the stuffing. Cut some veggies (yellow bell pepper, half of crouget, some mushrooms) and stir fry it with minced turkey meat. Season everything with salt, black pepper and chili pepper.
For the dough I have used pizza dough recipe:

I used the following ingredients (10 min in dough mode):
- 3/4 cups of warm water
- 1 tsp of yeast
- 2 cups of all purpose flour
- 1/2 tsp of salt
- 1/4 tsp of white sugar
- 2tsp of olive oil
Then rolled out the dough and filed it with the stuffing. Baked it in 425F for 15min.
The result was good 🙂
We also had soup for dinner. It is a very simple vegetable soup and it is truly a food for soul.
All you need is:
- 1 peeled and dubbed potato
- a bag of frozen peas and carrots
- 1 beef stock cube
Just put everything in boiling water (for 20min) and once it is done use blender to make it smooth.

I’ve never made empanadas before. I have a breadmaker so I may have a go and try some veggie ones. Nice idea to go with soup.
